This rice is the Sasa-Nishiki variety (first developed in Miyagi Prefecture, Japan) and produced in Chiang Rai Province which adjoins Myanmar and Laos in the northernmost area of Thailand. Chiang Rai is famous as the area where the Lanna Dynasty once reigned. “Lanna” literally means “millions of paddy-fields”. The land is surrounded by high mountains, enjoys cold and clean water and a relatively cooler climate: the best possible production conditions for the Sasa-Nishiki variety of rice. Yutaka Sasa-Nishiki rice is short grain and has a shiny and fluffy appearance when cooked. It is less sticky, has a lighter flavour and also keeps a good flavour when eaten cold. The rice doesn’t become too sticky when seasoned with sushi vinegar. Thus it’s one of the most suitable rice for making sushi.
